Hi Scott,
I'm thinking of something similar for my trike but with a pin type connection mounted on the carrier rack. But I'd prefer an axle mounted type, there's less effect on the trike stability the lower down the hitch is.
The strap type is probably better/easier for a bike as it allows more lean.
My trailer is for dual use, cycle-towing and hand-towing so I'm using a full length tow-bar. This lets me rest the kayak/trailer without the kayak touching the ground.
If you're changing the handlebars from race type (drops), go for touring bars, they are a bit more ergonomic than the straight trail bars.

PS, between kayaks and bikes, it's a good way to get overall fit. Bike for the legs, kayak for upper body. Saves a fortune on gym fees.
