I would be sure to do a test panel if I were adding any black as the black is pretty powerful. It would take very little black to make it appear almost completely black.

A second coat will definitely darken it some more and help even out the color. Applying epoxy will darken the color and make it richer looking. It will look approximately like it did when the stain was still wet. The epoxy will also even out the color some.
