2 oz would be strong enough, for weight savings it will save a little resin, not much, and a little in cloth weight , if you are looking to shave every ounce it could be ok. I would use thinnner wood and build internal stringers composed by foam ribs covered in glass. If you build the internal stifeeners in a web fashion keeping the ribs diagonal it will be really stiff. this is for the racing shell.. used for racing, a kayak used for just kayaking would be sort of delicate built that way. My 2cents
