Epoxy/wood dust as strip gap filler is very hard to sand, messy to apply and takes long to set-up.

I use Dunhams water mixed wood filler. It sands easy, sets quick and can be colored with
artist's acrylic paints.

Save yourself some grief. Make a test wood strip panel with gaps. Try filling the gaps
with different fillers and then try sanding. You will learn all you need to know.

On the other hand, some people just want to hear their ideas affirmed like,
"Can I fill my gaps with boogers?" Response, "Oh yeh, that works."

If you take a little time and do a test of your idea IN THE SHOP you'll find out how it works
for you, before you start smearing goo all over your boat.
