Since it is unlikely you'll exceed 60 inches in girth at any point on the kayak which gets cloth (the widest point is by the cockpit coaming, and that is open) it would stand to reason that you could use a single piece the length of the boat to do the outside, and another piece the same size to do the inside.
But reason was never a big thing around here. Face it, if we were reasonable, we'd get minimum-wage-paying jobs, and after working at them for 300 hours we'd have more than enough cash to buy a manufactured kayak.
So the thing to do is to get a really good idea of how well your glass is going to fit on your kayak. The way to do that is to make a (nearly free) template. For this we use the most useless commodity--yesterday's newspaper. Take a little tape, or some paste, or glue, and patch together several pages of newspaper, until you have something long enough to cover the length of your boat. You could even try to make something 58 inches wide by however long you need. Why 58 inches when you cloth is 60 inches? Well, that 60" is a nominal size and it is likely your fabric will not only be a bit smaller, but you will also want to cut off the selvedge edges (there goes another inch) and allow for some possible unravelling.
When you wrap the boat with your newsprint quilt, you'll see that at each end there is going to be quite a bit of excess material, and it will be in some strange shapes, which might not be very usable. Well, to maximize the size of those scrap areas, and possibly get some useful pieces, consider carefully how you lay out your cuts.
Below is an illustration of one suggestion. Once you have paper templates for the hull and deck you can measure them and see if such an idea is usable for your boat, or not.
