Stitching, particularly with wire, lets you alter panel relationships as much as you like right up to the time the glue goes on. On bigger boats where stiffer ply is used it usually takes some juggling to get everything square and up to measurement. Also wire/electrical ties don't leave any residue that could interfer with epoxy adhesion. When I have a hull that satisfies my tape, chalk-line and square I want the glue-up to procede before anything can shift.
In the end, the only thing that matters when you have erected the hull is that the keel is straight and that the right side is a mirror image of the left side.
If you can do that using the suggested multi-media techniques have at it. I'll stick with wire.
