I used cherry on my last build for outer stems. It's a good hard wood with some nice color. I wouldn't worry too much about the dryness. Once cut in strips or thin, it will dry out fast in a heated room. I would take the dryer wood however. Cherry is a nice wood for furniture - especially stained. As an accent wood, you'll probably be disappointed because it will look like cedar - maybe not even as good. It won't really stand out unless you are using pine or spruce. There is some cherry heart wood that is very red but most cherry planks are a light pinkish brown. I always hunt for some very dark cedar for accents.
