I'd bet you can get that fine bow, and probably more "wave cutting ability", without those diving chine arches. They do not "flow" are not likely helping performance (yes, I realize the hull is quite narrow there.
Draw closely spaced buttock lines to help visualize what the chines do to the water flow along the hull. Drag formulas alone are not going to show this stuff.
Doing things unconventionally can be cool, but sometimes conventional wisdom might indeed be wise. When I look at the images from your software I am left wondering if maybe the program is forcing those chine shapes as they just don't make sense to me. The only time I see lines like that on a hull are on shadows on some photos. Seeing that it's easy to imagine an edge there - but yours is the only hull I've ever seen actually built that way.

Compare the image to your bow/stern images. The link below is to his Cirrus design - not to promote it or single it out - but because it's a reasonable example of a nice smooth flowing chine and the "Design Features" section (scroll down) mentions the chine sweep and turbulent flow issues. Even if your reverse arched chines are 100% below the waterline they will still induce turbulence - and do so far forward where it has the most negative effect.
Sorry, I know I've gotten into this before - but it just looks off to me - and in ways that could help explain why your first one is as slow as your 15' SOT. As much work as you put into this I think it's worth looking at.
