Hi Mike,
It's not so bad if you think about it. A surfboard is a solid shape with all the glass on the outside, (difficult to glass inside a solid) :D while a kayak is a hollow shape with glass on the inside as well as the outside. Count the cross-sectional layers.

With 4oz glass, a kayak has 16oz of glass plus whatever extra reinforcement is added, usuallly another 4oz layer along thecockpit area. 2oz more than the board.
Go with 6oz on the kayak and it's 24oz of glass we're talking about.

With a sailboat deck, you can glass in foam 'beams' to the underside after glassing to give a box-section effect in flatter areas.
