Stitching the hull and deck together is usually not done, I believe. Most people tape the hull and deck together, then glass them together. Whether filleting is done or not, I am not even sure about.
Personally I stitch the deck and hull together just like the rest. This is done by sticking a piece of 2 x 4 in between, it's not at all difficult that way. The way I fillet is by using a long piece of aluminum window material that has a 90 degree fold (not sure how to describe it), tape the edges, pour in thickened epoxy (wood shavings, cab-o-sil or Qcell), stick it in the boat that is turned on its side, flip it and the epoxy mix will pour in filling an entire seam from cockpit to bow or stern. You need 4 positions to do this and have to wait a few hours in between seams. I apply fiberglass tape only to the outside. So far I am happy with how this works, it looks really strong.
