FreeShip (basically the same as DelftShip) can be used but IMHO it does not work easy nor reliably. It has way more capabilities than we need and that makes it hard to use. Some people have learned how to use it but from my experience, it takes too much practice and often results in unreliable outcomes without good feedback about why surfaces are not developable. The control is done indirectly through a so called control net consisting of interpolated curves around the actual surface. The graphics are quite detailed but not great. Joining panel contour lines is far from trivial. Without reading the manual and a thorough self study you will not be successful.

I wrote my own software which gives direct control, never results in non-developable surfaces and gives accurate results. However scripting is required, the kayak is entered in the form of a matrix of cross section data (no interactive graphics). You have to look at an example first so for anyone but me it may very well be useless. If you are interested, members.cox.net/aling13. I am using it now to build my 3rd kayak next week with a bit of luck.
