I got my matting from a canoe dealer (Western Canoing, Abbotsford, B.C. -- but most of the others have it and will install it if you want to pay). Go that route or, at least make sure what you are using is compatible with the epoxy you are using. I have it on an old whitewater glass solo boat and an ABS tandem play boat. Two schools of thought on it -- put it on immediately or wait until you wear a hole in the craft and then put it on. I am a natural born procrastinator. The skid plates are an eighth to a quarter of an inch thick and brown and cover the area most likely to be bashed. There are different sized ones for sea kayaks -- have not seen those but Undercurrents in Calgary carry them.
