In New Zealand I would of course suggest my design, the Mac50, but then I have a vested interest in that design. "Google" it, there are comments by other builders who seem to like it. In the USA the CC was replaced by the Chesapeake.

So? You don't have a deck on the mock-up so you can move yourself to change the trim, add a built-in skeg if it doesn't track as well as you want it to. Speed, look at the beam and length. Some software will give you a hint as to how fast the hull might be. The mock-up is there to work these things out and not necessarily to be the definitive final shape.
