With the Disko Bay I built last year the strips vary in width, to as little as 1/4" at the chine to make the very tight curve there. Doesn't really matter what the width is as long as they can follow the curves.
Btw, with cedar, it's difficult for me to see where the narrow strips are, I suspect that non-builders will never know the strips arn't all the same width.
