You just have to overcome your survival instinct when trying on dry suits for the first time. You absolutely won't choke or pass out - think of the lawsuits!
Trimming the neck gasket only adds a bit of comfort, which means that pressure will always be there (though after a while it becomes unnoticeble). And, in my experience, even good latex will eventually stretch some, so you don't want to get too scissor happy and end up with a gasket that's too loose.
Definitely go for GoreTex and relief zips! The integral booties are good, too - ankle seals are just another potential leak site. OTOH, ankle seals make great drains.
A fun thing you can do with your drysuit, while wearing it in the water: Blow it up (through the neck) and float around like an air mattress!
