It's more than just the V-hull at bottom, it's about the whole bottom shape.

Why is Black pearl almost flat bottomed? It's because it's shaped by East Greenland kayak. These are almost flat bottomed, but have strongly raked chines. The shape is very interesting - and very efficient. Flat bottom will lead to low CG as the paddler can sit lower. Narrow bottom and raked chines will give very nice underwaterbody - low resistance at low and high speeds. The raked chines will also create nice secondary stability. Check out kog #87 which can be downloaded from my website.

If you make flat bottom at middle and V at ends the result will be stable and most likely go through waves nicely, but the water would move under it like the kayak would have more rocker. Thus it's ending up to be slower.
