I would be extremely leery of leaving the inside unglassed. The glass protects the wood from moisture from condensation etc. At the very least I would want 3 coats of epoxy on the inside and even that would be subject to checks and splits. The Grain Surfboard method is OK if you plan to destroy the board through other forms of abuse well before the accumulation of moisture kills the board, but I wouldn't want to build a kayak or surfski that way.
The glass assures a good moisture seal that is going to last a while.
The big problem with stripping a surfski is getting the deck-hull joint assembled and strong. I don't know how composite manufactures handle it, but I be many are just taped on the outside, which is barely adequate.
My though is to create a lip for a box-style joint with another piece of wood laminated to the inside of the top strip on the hull so it over laps the joint as tape would. Then butter it up with dookie schmutz before assembly. The outer seam can then be glassed as normal. The inside sheer would reinforce the inside of the seam significantly.
