You're concerns about forcing to much water under the hull would be a problem with a flat bottom hull,a sharply v'd bow with a little lift running back to a slightly semi v'd hull bottom and then back to a sharply v'd stern without a lot of lift makes for a straight tracking faster hull design.One example is the Roy Folland Sea Wolf.
