John,

Take a look at this site from Robert Laine. http://www.sailcut.com/Main_Page He offers a freeware program called Sailcut which will help you to lay out your panels, whatever material you choose to use for your rig.

It's kind of fun to play around with the program and it costs you nothing but some of your time. There's a comprehensive instruction booklet in three languages, a step by step tutorial and all sorts of other goodies to help you produce a really nice sail.
