Hi Gaetan,
I don't know the boat as I'm from Tasmania, but if it is hard to turn from its course, you need a rudder with plenty of turning power, the bigger better. If it turns relatively easily, smaller will do. It is not the width that counts, but the tracking. A double will generally need more turning power than a single as it will track more. Rudders, by the way, are usually used for course correction and not for turning corners.
