One of the reasons sail makers cut the seams was to not show your take ups,not give the competition any help, we would take the panel and draw the seam take up on the cloth that is pined to the floor, then use double stick seam tape panels together. I would guess on this small of a sail they would be around 1/2" to 1/4" going from 0 to 1/2 at the luff from the 30% line drawn from top to bottom. This is where the quick full size mock ups with 3mil plastic would work great. Smaller sails we would just tape them at the seams, sew the luff tape on and go try them out. We use a 3 M tape if not in the sun to long you could reset the seams. Still had to redo the luff tape Sail makers make lots of sails that costumers never see. My loft was with in walking of the marina, many have masts in the parking lots.
The advantage of the rigg you are choosing is, no boom, or head smacker, should work great on a yak.
