Find someone to help you with the glassing. Some peopele are naturally good at it , some are bad at it, some learn to be good at it. But it sounds like you know where you lie on the glassing skills spectrum.
Your picture didn't come through, but even without seeing it, you should be able to glass over a sharp keel (with say, a 1/2 radius) and follow an extremely rockered hull. The wet-out glass will streach and comform very well to the keel/hull shape.
