Just do a search on the WoodenBoat forum. This question has been asked and answered dozens and dozens of times over there. Or, ask your question there and you'll get tons of varied responses - everybody has their favs.

Designers to look at would be Phil Bolger, Jim Michalak, Sam Devlin, Michael Storer and John Welsford, to name but a few. There are many others.
