I have no info on sailing rigs, but if you (or anyone else) needs quantitative foil data, pick up a copy of "Theory of Wing Sections, Including a Summary of Airfoil Data" by Abott and Von Doenhoff, Dover Editions (around $20). The appendices include x-y data used to draw over 70 types of foils, symmetric and nonsymmetric, plus performance data in the form of lift and drag curves as a function of angle of attack, Reynolds number, etc. This is the bible of standard NACA foil shapes used in low-speed applications - e.g. my brother uses it for windmill blade shapes, you could use it for hydrofoils, rudders, RC airplane wings, etc.

There's enough theory in the first half of the book to figure out how to use the performance graphs, but many just pick a foil based on a pleasing shape and use the x-y coordinates to draw the section for construction.
