The mold for the Anas Acuta was derived from a plywood hull, and the Anas is extremely maneuverable, and has very fine ends. I agree that it is a complex combination of factors, including length, rocker, sheer and beam (side rocker when the boat is leaned), chine placement and shape, that comes into play to affect maneuverability.
A number of the kayaks that I tried in Greenland did not maneuver at all like the Anas Acuta, but were much faster, with a great "glide", although they visually "looked" very similar. I attributed this to their very narrow beam (17") and hull shape, but it just goes to show you that you can't make many sweeping generalizations from testing only a few samples of a given boat "type". Harvey Golden has made over 30 replica kayaks, of different shapes and sizes, and told me recently that he is still often quite wrong about how his replicas actually handle compared to how he thought they would handle.
So, to answer your question, I wish I knew too!
