Actually, I can pretty much straighten my legs just be allowing my ankles to flex to 90*. In normal paddling/braced knee position, my toes are angled forward a bit.

I do not have room to straighten a leg AND point a toe at the same time, though. However I have never (yet) felt the need for that particular stretch.

But yes, I can slip a foot between the foam block & pump. Or just push on the pump button for a couple of extra inches of room.

True enough. Although I've been able to move my seat an inch or two either way & still be comfortable, just have to adjust the padding on the knee braces. So it doesn't have to be a "one person only, for ever & ever" boat.
