Take another look at the diagram and notice that the rope coming from the left and the rope coming from the right are almost woven together in the making of this knot. The overhand knot itself is two ropes thick. This kind of knot is particularly effective when used to tie flat webbing together.

With a fisherman's knot the rop from the left is tied around the rope on the right, and the rope on the right is tied around the rope on the left. If yo make one pass around the line you get a single fisherman's knot. Two passes gives yo a double. Then these two knots are pulled together, sliding along their opposing ropes until they make contact and bind. This works very nicely with round rope, but with webbing it is hard to tighten the double fisherman's knot properly.
