While many S&G kayaks are hard chined, many are multichined. The more panels, the closer the approximation of a smooth curve. It really depends on the model. I realize that you are looking at doubles, but to illustrate my point, you can take a look at Nick's S&G version of the Guillemot. It has a hull shape that is very close to the hull shape of his strip built version of that same boat. I've heard others mention on this board that there are slight handling differences between the two, but they are very similar.
