I too got the cedar for my Guillemont at HD. I had the same issue with one edge being rough, and did not put on a bead and cove. Since I was hand planing the edges to fit, I just took off the rough stuff. If I had a planer, in hindsight, I probably would do it before I ripped the strips though, as some strips fit together nicely without having to plane at all.
