I know exactly how you feel, as I have the same tendency. I built up quite a collection of reference material before I put tools to cedar. Trust me, there's no way your first paddle will be "perfect". Even if the dimensions work out fine for you, there will always be a little voice in the back of your head saying "what if I changed...?" Don't fight it; just build more paddles and have fun! Fortunately, they're cheap and easy to build.
Boats, on the other hand, are a whole 'nuther story!
