I've built two modified Guillemot S&G's - both were shortened to around 15'8". In theory, shortening the length-wise offsets without modifying the widths as well can cause problems. However, I used cheap luaun and just shortened the length without doing anything to the widths. It worked for me.
I fiberglassed the outside on all of one, just the hull on the other (I could stand on either one without damaging them), but only put glass in the cockpit area on the inside (more for abrasion resistance than strength).
Try shortening the Nick's S&G for your wife. I am 6'0", 180lbs, my wife is 5'4", 115lbs, and my shortened boats work great for both of us on day trips. She is an inexperienced paddler and says that she feels completely secure in it. They track stronger than Nick's strip designs and have good initial and secondary stability - but probably stronger initial and weaker secondary than most strip designs.
