As if you didn't have enough choices already, I think you should check out Stillwater Boats. The 2 boats pictured might be something canoe-like that your dad might like. Being stitch-and-glue, they'd be quick to build. And you should probably build your dad's boat first, so you can make your first-time-builder's mistakes on it before tackling your own. :)
