Giving the stern a slightly longer run aft would tend to stiffen it's tracking. You would want to do it in such a way that it does not add to much volume in the stern as this would just lift the stern higher and possible reduce tracking. Creating a cross section similar to the Expedition Single (below) or Coastal (link) will create an integrated skeg without adding much volume. BTW the Coastal will have much similar handling to the Guillemot but with stiffer tracking. The only problem is that skeg shape is harder to strip.
