Strip: To Cove to not to Cove

I can see how it would be easier in some aspects to have the strips coved but, what about intricate designes? It seems that it would be a hinderance when trying to to any end or intersecting joint work. Would you cut the taper and then re-cut the cove into the strip? Or is it easier to just work with flat strips and use your trusty plane to work the right bevel?
From my experience making wooden ship models (1/12 scale Plank on frame) it would seem that the cove would just complicate issues.
Any opinions or techniques would be appreciated.
