There are a couple of problems with creating a "scale model" boat. The first is that volume, therefore displacement, is proportional to the cube of the length. So a half-scale boat will displace just 1/8 of what the original did. The second problem is ergonometric; will the scaled-down boat be wide enough to accomodate your full-scale butt?
Hawaiian canoe racing is a big sport around here, with a number of teams along the coast. Some guys who are really into it have one- and two-man boats. I don't know who makes them or where the plans come from, but I bet you could find something online.
