I understand the preference for the satin look, it can look nice. However, I do not like the look of satin varnish. I always find it sort of muddy. Use gloss varnish, following Rob's technique or whatever worked for you before, and then remove the gloss using 0000 steel wool. This will produce nicer results than starting with a satin varnish.

I should point out that much of the UV protection of varnish is due to its gloss. This reflects much of the UV so the absorbers in the varnish itself don't need to work as hard.
