John - White oak grows in Iowa so you should have no problem getting some. 1/4" thick is fine for ribs. 3/8" thick is good for the hoop. Soak in water for several days before steaming. The term bending oak means that it has been air dried and is straight grained with no flaws. Kiln dried wood will work fine as long as it is soaked before use. Do not use red oak as it decays quick when damp.
