I had good success with adding a layer at a time. I am nearly finished with a Guillmot expedition in which I used the expedition layup schedule from Nicks excellent book. I think that you would be fine to allow the first layer to begin to get to the "green" stage and add the second while the first is still chemically active. This achieves a good chemical bond. I didn't really have a problem with adding two layers at a time, but I used 6 oz. fiberglass cloth. Have fun!
