This is an absolute guess,,but along with skinny/hard chined boats being twitchy I wonder if the ends lose support in choppy water more readily because they are "pinched" as you describe it. My first glass boat was a CD Solstice, it's very stable with very tapered ends. Although I was still a novice I noticed very abrupt transitions in support as the water became choppy that other similarly stable boats didn't have.
