1/4" could tear if you velcro it down and pull too hard when removing it. Or, if you simply glue it down, 1/4" might tear when removing it. (You'll always have some reason or another to have to remove the seat, so you might as well make it removable).

3/8" would be quite a bit tougher than 1/4".

You still have a ways to go from 3/4".

How much "thigh support" foam to remove for thigh clearance? Depends on the size of your thighs!! You don't want to remove so much that you lose contact with the seat when your knees are against the hooks. You don't want it so tight you can't get out, either. Start too thick, and fine-tune it by removing progressively more.
