I have modified my process since writing the book to include in inner stem. Although I did mention the possiblity of using one in my book. I do primarily because it is easier and the glassing of the ends goes better with it there. Although it probably does add some strength, I am not that concerned about it. With my plans I include a "bevel" line on the stem forms. When I make an internal stem I cut the stem form at that bevel line and replace the beveled bit with a cedar or pine piece that will stay in the boat.
The advantage of this is you have a solid surface to glue to instead of just gluing to the strips on the other side. It also saves having to make a careful joint between the strips on either side, as you can just cut the strips off flush with the end of the inner stem. Afterwards you can plane down the ends of the strip until you see the stripe of the inner stem down the middle before installing an outer stem.
When you go to glass the inside you are not faced with trying to get glass all the way down into the tight "V" of the stems, it is filled to 1/2" wide with the inner stem.
Either way works, but as of this year I prefer an inner stem. This is subject to change without notice.
