I build most of my cockpits at or about 16-18" wide by 33" long which is the standard "Large" commercially available sprayskirt size.
Most of the commercial kayaks I've seen, seem to be going to the size as it is an easy and comfortable size to enter/exit.
As for the small - medium size cockpits I can't tell you those dimensions.
