Rip them yourselves; you'll save a bundle. Pay attention to the color and shade of your boards - it makes a big impact on the look of the boat. "The Strip Built Sea Kayak" by Nick Schade http://www.guillemot-kayaks.com/Book/index.html is an excellent resource for kayak building. CanoeCraft by Ted Moores is a good canoe book http://www.bearmountainboats.com Ted has a builder's forum for canoes.
My suggestion is to buy or subscribe to Wooden Boat Magazine. Most of the Kayak designers are in the back. Check out their Web sites and fall in love with a design; then build it.
