I compared two finishes - one paddle I coated with S-3 'rot-fix" which is a low viscosity epoxy, and then varnished and rubbed out with steel wool.

The other, I made a soaking container, and soaked it in the usual brew for 8 hours, turning it occaisonally to get both faces.

The varnish/epoxy is a harder finish, and I suspect it will prove quite a bit more durable. But it's a PITA to apply and scuff it out - the varnish doesnt rub out nearly as easily as the brew.

The soaked paddle was really easy to do, and it buffed out quickly. It dried in a day and a half ( at 105 degrees...). And while I dont have penetration data without further testing, it did not need any additional coats. Given equal water penetration resistance, I'm leaning this direction.
