I am in Wellington NZ - Ph: 04 3873522 (evenings). I have built and sea trialled Nick Schades stitch and glue guillemot. I reckon you could complete your expedition in that design (especially considering Paul Caffyns adventures in a Nordkapp). Another option would be to buy a Pygmy kit (costs us antipodeans an arm and a leg with exchange rates, duty, GST (goods and services tax) and freight, but no more than an off the shelf plastic 'storm' kayak. From what I have seen their kits pretty much have everything you need apart from building space. That would enable you to overcome your building hurdle with a leap and a bound and get straight into training and logistics.
Then Grants' (in this thread) WS180 is one sweet looking machine that could easily do the job as well.
