S&G: How close is close enough

Time to commit. I've measured, cut, planed, aligned, stitched, aligned, checked, eyeballed and, to the best of my eyes, it looks straight. How much error can there be in the hull before you notice it in the water? What is considered the most important measurement and how do I sleep at night after putting down the epoxy and glass knowing my work is 'straight enough'?
I've read about taking out the twist using winding sticks but, that just doesn't seem to be enough to ensure it's right. Am I being too precise with this or is there other ways to make sure you're straight?

PS The hull is the Guillemot S&G.
