I don't see anything wrong with that except the boat would probably be a little stronger using the epoxed glass on both sides. Polyester shouldn't be applied to Epoxy but Epoxy can be applied to Polyester. Just sand it first. I did this to a sail boat I built, and for 10 years and there were no problems of seperation. I also strengthened the area's around my catamaran rudders using epoxy over the Polyester and its still inplace after 30 years.
