I think you are trying to compare the weight of the spool of sinew with the description of fabrics, where the thickness is given in weight per square yard or square meter. It is not that way.

They are not selling two different products: 4-ounce sinew AND 8-ouce sinew, but rather they are selling two different quantities of sinew: A roll that contains 4 ounces of sinew by weight, and a roll that is twice as large.

When you get 4 ounces of sinew you are getting a spool on which the manufacturer has wound 4 ounces of sinew. If you use 1/4 of that, you have 3 ounces of sinew left on the spool. An 8 ounce spool of sinew is going to be about twice as long, but the material should be the same as the sinew on the 4 ounce sinew.
