Several years ago I refinished an old canvas covered boat. The owner had admired strip built kayaks and new that his boat was cedar planked on oak ribs and asked me if I could get rid of the old canvas and finish it bright. It is generally not recommended to seal only one side of a hull when the other side may see moisture. I explained this to him but he really wasn't that concerned - he said he wasn't going to use the boat much but anyway and would rather just look at it.
I recommended that we strip the varnish off the inside as best we could, sand, and then give it a good long soak in CPES - let the penetrating epoxy do it's thing.
I was a bit concerned about all of the nooks and crannies that abound in this ribbed boat but had confidence in CPES and felt that it could find it's way to soak everything.
The exterior of the hull was then fiberglassed.
It's amazing, but to this day there has not been any problem with moisture damaging the wood.
CPES = good stuff.
