Hello Pete,
The only reason I can think of that would prevent me from using CPES is the solvents during application - whew, respirator and full immersion gear here as I'm sure you are well aware!
I haven't tried it as a seal coat but am tempted now that you've defined all of the positive points to do so. In fact, I will use it on the next kayak as a sealer and keep you posted as to the results. This kayak is going to incorporate some teak - primarily as accent wood. As you know teak is an oily wood that doesn't take too kindly to adhesives without some extra preparation - in this case wiping down with MEK to get rid of surface oils followed by an immediate application of CPES to keep the deeper oils where they belong - deeper and away from glue joints and fiberglass.
